Mash-Pallow recipe





Mash-Pallow recipe:
Usually Mash-pallow dish don't come w/ meat, but some people like to have it w/ chicken and some people like it w/ boiled egg or dried apricots ((it's your choice))
Ingredients:
4 cup Basmati rice (I use Khurshid brand Rice) if you can't find it,try use Saffron brand rice or Baghlan. 
2 cup of whole Mung beans
canola oil (for cooking)
((1 Ib chicken leg and thigh) optional
((1 teaspoon garlic optional-only if you cook it w/ meat))
1 teaspoon tomato paste
1 tea spoon paprika
2 chopped onion
2 cube of knorr chicken or veg flavor
1 teaspoon cumin powder
1 1/2 teaspoon Salt
1/2 tea spoon cardamom powder
Wash Rice very well and soak in water for several hours same thing w/ Mung beans.
In a pot add onion and oil cook until it's lightly brown.Than add salt ,1 cup water let it boil for 5 minutes. Than add the rest of the ingredients and add 1/2 cup more water and continue boiling in med low heat until the sauce is oily and kind a watery. Drain the gravy sauce keep the juice on the side until the rice is ready. Make sure the gravy sauce taste salty. Fill a medium-size pot halfway with water and bring to a rapid boil. Drain the Mung-beans well and add it to the boiling water. Return to a boil and cook for 10-minutes or until Mung-beans are tender and soft but not to soft.Now drain the rice and add it on top of the mung beans make sure it has enough water ((you can always add more boiling water)) Keep boiling and slowly stir ,taste the rice it should be soft on the outside and still firm, but not brittle.Strain the Rice and mung-beans mixture. Add the drained rice and mung beans back to the pot, slowly pure the gravy sauce and some hot Oil to the rice mixture. Mix from the bottom first so you don't break the rice and mung-beans. Add more oil and gravy if needed, spread some more ground cumin seed powder and cardamom powder all over. With the handle of a wooden spoon, poke five holes through the rice mixture,cover top bake on 450 degrees for 10-15 minutes than another 20 minutes on 350 degrees.
Enjoy Mash-pallow w some Afghan Salata and torshi.
